Wholetail Scampi with a Prosecco Mayonnaise

Prosecco Mayonnaise
- 200ml mayonnaise (shop bought or homemade)
- 50ml of Prosecco
- 1 chopped avocado
- Handful of cherry tomatoes, cut into halves
- 1 bag of watercress
- 2 tbsp olive oil
- 1 tsp balsamic vinegar
- 1 lemon
- Pinch of salt & pepper
- Pinch of cayenne pepper

Method
- Cook Wholetail Scampi as per on pack instructions
- Mix the mayonnaise with the Prosecco & pinch of cayenne pepper
- In a cocktail glass, place the watercress followed by the avocado & tomatoes. Make a dressing with the olive oil, vinegar and season to taste. Drizzle over the salad
- Place scampi on top & a spoon full of mayonnaise. Dress with a lemon wedge and serve.
- Serve with a chilled glass of Prosecco.
