Prosecco Mayonnaise

  • 200ml mayonnaise (shop bought or homemade)
  • 50ml of Prosecco
  • 1 chopped avocado
  • Handful of cherry tomatoes, cut into halves
  • 1 bag of watercress
  • 2 tbsp olive oil
  • 1 tsp balsamic vinegar
  • 1 lemon
  • Pinch of salt & pepper
  • Pinch of cayenne pepper

  1. Cook Wholetail Scampi as per on pack instructions
  2. Mix the mayonnaise with the Prosecco & pinch of cayenne pepper
  3. In a cocktail glass, place the watercress followed by the avocado & tomatoes. Make a dressing with the olive oil, vinegar and season to taste. Drizzle over the salad
  4. Place scampi on top & a spoon full of mayonnaise. Dress with a lemon wedge and serve.
  5. Serve with a chilled glass of Prosecco.
